چکیده

Concerns over the safety of chemical antioxidants have prompted researchers to conduct extensive research on plants that are a rich source of natural antioxidants. Green cucumber peel is a rich source of phenolic compounds that are the most important natural antioxidants. in this study, first, the effect of ultrasound, Massage and microwave extraction methods on the extraction efficiency of phenolic compounds of green cucumber peel with three different solvents in a completely randomized design with three concentrations and two replications was investigated. The antioxidant activity of the extracts of green cucumber peel extract was evaluated by DPPH, ABTS and Redusing power tests. The highest extraction efficiency of phenolic compounds was obtained by Microwave method and the highest amount of phenolic compounds was obtained with 70% ethanol solvent at .124 mg gallic acid per extract and the lowest amount was obtained with water solvent extraction method with .04 mg gallic acid Each gram of extract was.
