Stone Fruits are some of the important agricultural products, which are widely used by humans. These products are highly sensitive during harvest and post-harvest processing. Therefore, like other agricultural products, knowing and having information about the physical, mechanical, and chemical properties of stone fruits are necessary. The physical properties include shape, size, geometrical mean diameter, arithmetic mean diameter, surface area, sphericity, and color indices, mechanical properties comprise penetration, impact, compression and cutting forces, elastic modulus, deformation, and chemical properties like pH, TSS, TA, antioxidant activity, etc. Knowing about these and many other properties will help researchers and farmers improve the quality and quantity of their products. One of the parameters which describe stone fruits' quality is bruise damage. The bruise damage will occur because of the impacts during harvesting, handling, transporting, and sorting. Therefore, having information about the behavior of the fruits under different impact forces will help us to know how we can manage and design the equipment for these steps.
